Dubai Hills Estate Bar Launches Global-Fusion Passport Menu Blending Indian Flavours with International Cuisine

A modern Indian tapas bar in Dubai Hills Estate has unveiled an ambitious new menu that takes diners on a culinary voyage across ten countries, fusing traditional Indian flavours with international cooking techniques.

Revelry has introduced its Passport Menu this January 2026, marking a significant expansion of the venue’s food offerings. The new selection draws culinary inspiration from the USA, Mexico, China, Spain, Italy, Thailand, South Korea, France, Japan and the UAE, creating dishes that bridge familiar comfort food with adventurous flavour combinations.

The bar-led dining concept puts cocktails at the forefront of the experience, with shareable plates designed specifically to complement the drinks menu. This approach positions Revelry as part of a growing trend in Dubai’s hospitality scene, where the traditional restaurant model gives way to more relaxed, social environments centred around the bar.

Located in Dubai Hills Estate, the venue operates under the Passion F&B umbrella, a hospitality group with an established portfolio of acclaimed dining concepts. The group’s other ventures include Trèsind, Trèsind Studio, Carnival by Trèsind, A Cappella, Maison de Curry and Avatara, giving Revelry a strong foundation in Indian-inspired cuisine.

The Passport Menu showcases an eclectic range of dishes that reimagine street food and comfort classics through an Indian lens. Diners can order Shawarma Kulcha, a Middle Eastern-Indian hybrid, alongside Chicken Dim Sum infused with Indian aromatics. Butter Masala Mac & Cheese brings a spiced twist to the American staple, whilst Taco Chaat merges Mexican street food with Indian chaat traditions.

Paneer Croquetas offer a Spanish-Indian fusion, taking the classic tapas format and filling it with Indian cottage cheese. The approach throughout the menu is playful yet considered, with each dish crafted to encourage sharing and grazing throughout the evening.

Desserts follow the same global-fusion philosophy. The Brownie vs Cheesecake presents a playful take on two beloved sweets, while Chocolate Mantecato draws from Italian gelato traditions. Hazelnut Kalakand transforms a traditional Indian sweet into something with broader appeal for international palates.

The venue’s atmosphere strikes a balance between refined and approachable. Rather than formal dining, Revelry cultivates a neighbourhood energy where evenings develop organically.
